The everyday ritual

Barefoot on the runner rug. Pan already warm on the gas ring. One trip to the fridge for the eggs, one to the counter for the bread — and the morning has a shape. Eggs and toast doesn't need a recipe so much as a rhythm.

The method

  1. Warm the pan on medium-low with a knob of butter while the toaster does its work.
  2. Crack the eggs in gently. Sunny-side for a runny yolk; nudge the whites to set the edges.
  3. Butter the toast hot so it melts straight into the crumb.
  4. Slide the eggs on top, flaky salt and cracked pepper, and eat standing up if you have to.
